The publican of today is facing two major new challenges. Firstly the introduction of the smoking ban has forced pubs to move away from the traditional pub business model to a sales mix with a growing bias toward providing family friendly facilities and food.
Secondly, the reduction in personal disposable income has led to shrinkage in the average customer spend and increased competition between establishments. This clearly puts a strain on gross margin and cash flow. |
